Quick and easy 30 minute meal, packed with veggies and it also tastes great!
Prep time: 5 min Cook time: 25 min Total time: 25 minutes 4 servings
2 tsp. extra virgin olive oil
1 lb. shrimp, peeled and deveined
8 oz. high fiber pasta ( I used gluten free)
1.5 cups chicken broth
1 lemon (juice)
4 garlic cloves, minced
3 cups broccoli
14 oz. diced tomatoes drained ( I forgot to add these to my dish, oops)
1/4 cup Parmesan cheese.
